We must always be be'simchah (joyful) even when we have a yeridah (spiritual fall). Thinking about the times that we attained spiritual 'highs', like Seder night, helps us regain joy. Remembering the Exodus from Egypt gives us the ability to reject taivos (desires) that have enslaved us up until now. Maror is symbolic of yeridah. Pesach tells us to return to the beginning of our avodah (spiritual work). Matzah represents the strengthening of the heart.
