      In תוס' כתובות ה: ד"ה דם מיפקד פקיד, Rabbeinu Tam says that דם חלזון is not the the regular life-force blood, and therefore there's no איסור of נטילת נשמה involved in extracting חלזון juice. It doesn't seem to be a קושיא that the Murex's hypobronchial fluid isn't "blood" in the classical sense.
