While there are solutions of how a Rabbi can STILL say the Beracha on Sefira, even if he missed a night, I would suggest that he doesn't utilize them, rather make a statement that he too is human, he too can forget things, and most importantly, the Torah doesn't make a distinction between the "Shepard" and the "flock", as we ALL stood at Mount Sinai and are all obligated in the same rules and regulations.
