Is Yom Tov like Shabbat with the "leniency" of cooking or a distinct day with cooking never thought to be forbidden on it? This would lend itself to the difference of opinion regarding cooking in a world of refrigeration and freezers when the food would be as tasty if prepared before the onset of Yom Tov, and the question of BBQ's on Yom Tov. If indeed the day is distinct, the NUSACH of davening should change as well
